These aren't your average cookie. They're packed with nourishment, healthy fats, and superfoods like raw honey, coconut, and maca root!
- 2-1/4 cups unsweetened, shredded coconut
- 1/4 cup coconut oil
- 1/4 cup raw honey
- 1 tablespoon unsulphured molasses
- 2 tablespoons maca powder
- 2 teaspoons powdered ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/8 teaspoon powdered cloves
- pinch of salt
Makes 15 tablespoon-size treats.
Add all ingredients to a food processor or blender. Process on low-medium speed until the dough begins to fold in on itself. You may have to stop the food processor or blender once or twice, scrape down the sides, and process again.
Using a tablespoon-size dough scoop, drop balls of dough on to a parchment-lined cookie sheet. Sprinkle with a bit of extra shredded coconut for garnish, if desired. Place the treats in the freezer for 10 to 15 minutes to set. Enjoy!
Store these no-bake treats in a Ziplock bag or airtight container in the fridge or freezer.
